Blueberry Mint Nana Nice Cream Bowl with Chia and Pecans

Nice cream bowls are a great way to enjoy some fruit in a creative way. You really can have (n)ice cream for breakfast, at any age!
The blueberries and mint make the colour kind of a dark purple-y brown and perhaps isn’t the prettiest – but the taste speaks for itself!

Blueberry Mint Nana Nice Cream Bowl with Chia and Pecans

Ingredients

  • 2.5 frozen bananas chopped
  • Handful of blueberries + approximately 10 for the face
  • 1 tsp fresh chopped mint
  • 1-2 tbsp coconut milk (unsweetened) or your favourite plant based milk (or water if you’re in a pinch!)
  • Chia and blueberries for the face
  • Pecans for the eyebrows and ears

Instructions

  1. Combine the bananas, handful of blueberries, and mint into a blender. I used a personal size “smoothie” blender cup.
  2. Add 1 tbsp plant based milk on top. Blend. You may have to shake it/stir it around a couple of times. Be careful because you can over-blend. When in doubt, set aside in the freezer for a few minutes, stir and try again. Add another tbsp of plant based milk if needed.
  3. When the nice cream is a good consistency, pour into a bowl and add the toppings.
  4. Blueberries for the face, chia for the hair and pecans for the ears and eyebrows. You could even add chia as a beard or moustache if you are feeling extra creative! 🙂
  5. Enjoy!
