Zoodles, Veggie Balls N’ Kale in a Miso Tahini Sauce

Healthy doesn’t have to be hard! This recipe doesn’t take long, is extremely versatile, and the taste is on POINT!
I used Ikea’s vegan veggie balls and followed the directions on the package, separate from this recipe. You can use any other “meat” substitute, or none at all! Whatever works for you. 🙂
If you’re not about the “meat substitute” life – some ideas for more additions: broccoli, spinach, chickpeas, lentils, collard greens, peppers, tomatoes, onions, celery, carrots, etc.
The possibilities are endless!

For the Sauce

  • 2 tbsp tahini
  • 1 tsp coconut oil
  • 1 tsp tamari soy sauce
  • 1 extra large garlic cloves, or 2 small-medium cloves
  • 1/2 tsp raw miso
  • 1 tbsp maple syrup
  • 1/2 tsp frozen grated lemon
  • Salt and Pepper to Taste

For the Veggies 

  • 1/2 large bunch Dino Kale, washed and ripped
  • 2 large zucchinis



  1. Prepare your meat substitute (I used the ikea veggie balls, which basically cook in the oven for about 25 min). The rest of the recipe takes about 10-15 minutes, so you judge when you should start the rest of the recipe. I started once the veggie meatballs had already been cooking for about 10 minutes. 
  2. Combine sauce ingredients and set aside.
  3. Pan fry the Kale for about 5-15 minutes, flipping frequently. My fiancé and I like our kale crispy, so we were probably closer to the 15-minute mark.
  4. While the kale is frying, use a blender or hand blender to mix the sauce ingredients until smooth.
  5. Lastly, spiralize (or grate if you don’t have a spiralizer on hand) zucchini.
  6. In a large bowl, combine your zucchini, sauce and meat substitute. Mix it around a little, and serve.
  7. Lastly, top each serving with equal amounts of kale (this is so that it stays as crisp as possible!), and more pepper if you’re about it.
