Raspberry Pecan Cucumber Salad and an Easy Oil + Vinegar Dressing

A good salad doesn’t have to be hard! This recipe’s dressing is super duper easy, and is extremely versatile!

Raspberry Pecan Cucumber Salad with an Oil + Vinegar Dressing


For the Dressing

  • 2 tbsp olive oil
  • 1 tbsp coconut vinegar (if you don’t have any, try apple cider vinegar or even white)
  • Salt and Pepper to Taste

For the Salad

  • 1 tsp chia seeds
  • 1/2 cup raspberries, cut in half
  • 2 cups super greens, ripped up
  • 1/4 cucumber, cut into match sticks
  • 1 handful pecans; smashed


  1. Combine all salad ingredients in a big bowl.
  2. In a small bowl/cup, combine the oil and vinegar, plus the salt and pepper. Use a fork or whisk and stir for 30 seconds to a minute.
  3. Combine all ingredients, serve and ENJOY! 😀
