Gingered Purple Noodle Bowl With Watermelon Radish, Cauliflower & Red Cabbage

This dish is as delicious as it is neat looking! 🙂 A nice healthy dose of veggies and colour! Skittles may have coined the catch phrase “Eat The Rainbow” – but I think us Vegans have really brought the term to life! 🙂
Makes a great main dish, and tastes great cold as a salad or just leftovers.

Gingered Purple Noodle Bowl With Watermelon Radish, Cauliflower & Red Cabbage

Ingredients

Sauce

  • 3 Tbsp. olive oil
  • 2 Tbsp. Coconut Oil
  • 1 Tbsp. Tahini
  • 3 Tbsp. apple cider vinegar
  • 3 Tbsp. agave nectar
  • 2 Tbsp. Sriracha
  • 1/3 cup tamari soy sauce (or regular soy sauce if you don’t have any tamari on-hand)
  • 2 Tbsp. freshly grated ginger
  • 2 cloves minced garlic

Veggies

  • 1-2 watermelon radishes, oven baked (see monday’s post for how-to)
  • 1 package Kelp noodles – I used Sea Tangle Kelp Noodles
  • 1/2 a medium cauliflower crown, cut into florets
  • 1/2 a medium purple cabbage, thinly sliced/grated

Herbs/garnish

  • 1 tsp cilantro, dried or 1/4 cup fresh
  • ½ cup fresh mint, roughly chopped (or 1 tbsp dried mint leaves)
  • A few slices of cucumber, for garnish.

Instructions

  1. Bake the radishes, if not already baked (see instructions here)
  2. Roughly chop the garlic so that the allicin can build!
  3. Prepare (chop) cabbage, herbs, etc.
  4. Pan fry the califlower for about 4 minutes, adding water occassionally (+ covering) to soften.
  5. While that’s cooking, combine the sauce ingredients and mix well.
  6. Now add the cabbage to the frying pan, cooking for a minute or two longer.
  7. Lastly, add the noodles (the kelp noodles don’t really need cooking, but just to warm them up).
  8. Cook for a couple minutes more, mixing the noodles, cabbage and cauliflower together, so that everything is at-minimum warm.
  9. Remove from heat, add all ingredients into the sauce bowl, toss until well coated.
  10. Garnish with any fresh herbs used and cucumber.

Serve and enjoy!
